Cathedral Ledge Distillery: History and Production

Chris Burk, a veteran of the finance industry, opened Cathedral Ledge Distillery with his wife in December 2020, the New Hampshire Electric Co-op's member spotlight says. The distillery is USDA certified organic, and its grains come from New Hampshire, Maine, and Upstate New York, grown without GMOs, synthetic fertilizers, or pesticides, the same spotlight says.

The barn in North Conway

The spirits are made from grain to glass in a timber frame barn in North Conway, the bar menu says. The barn holds a tasting room, and daily 30-minute tours run at 1 PM and 3 PM for $10 per person, the distillery's website says.

What goes into the organic vodka

The trademark vodka is distilled primarily from organic corn and wheat and made with the water of the White Mountains, the distillery's spirits page says. The grains are milled on site, and the spirits are fermented, distilled, and bottled at the foot of Cathedral Ledge, according to the distillery's spirits page.

The flavored vodkas and the spirits built on them

The infused vodkas are made by immersing the named botanicals in the organic vodka, with no artificial flavors, colors, preservatives, or sugar added to any spirit, the bar menu says. The spirits page lists blueberry, fig, ginger, and horseradish vodkas and a cucumber and mint vodka, its newest spirit, with the blueberry vodka infused with organic wild Maine blueberries. The bar menu describes a caraway-centered aquavit made from the organic vodka with eight botanicals, plus a maple liqueur combining that vodka with New Hampshire organic maple syrup.

From vodka to aged whiskey

The whiskeys get two runs through a 300-gallon pot still with no column, thumper, or doubler, are never cold filtered, and age in new 53-gallon white American oak barrels, the menu says. Its bottled in bond series was distilled in the barn, aged over four years, and bottled at 100 proof, the same menu says.

Where Cathedral Ledge Distillery vodka is sold

The spirits are sold on site and at many NH Liquor and Wine Outlet stores, and the distillery now ships them, its website says. See the TTB label records for Cathedral Ledge Distillery on this page.
