Shiner: History and Production

Spoetzl Brewery, the brewer of Shiner Bock, announced on May 9, 2023 that it had added an onsite distillery, Spoetzl Distilling Company, to distill a line of Shiner Craft Spirits. Shiner Texas Spirits went on to launch statewide in 2025, according to a sponsored CultureMap Dallas feature.

Shiner's brewing background

Spoetzl Brewery was started in Shiner, Texas in 1909 by Czech and German immigrants, the brewery's 2023 release says. Jessica Michalec, the head of distilling operations and a fourth-generation Shiner native, told InsideHook that the team contacted a local museum historian when it began planning the distillery. The historian's material showed a history of distilling in surrounding Lavaca County, and the team found sales receipts for stills and firsthand accounts of distilling at area farms, InsideHook reported.

Tom Fiorenzi, director of brewery and distillery operations, said in the release that the entire process, from grain to glass, would be done by the Shiner team in Shiner.

The stills in the brewery cellar

The distillery sits in one of the oldest cellars of the brewery, and Shiner commissioned a copper pot still and copper rectifying columns made in Scotland, the release says. Everything the distillery makes begins as Shiner beer, since all of its spirits start as brewed mash before distillation, InsideHook reported.

How Shiner vodka is distilled: two accounts

The vodka is made from corn and barley, distilled twice in the pot still and then through two column stills with three and 20 trays, InsideHook reported in July 2023. Counting each tray as a mini-distillation, as Shiner does, puts the total at 25 distillations, the same report said. The spirit comes off the still at 190 proof, is carbon filtered and chill filtered, and is blended with the brewery's artesian water before bottling at 80 proof.

A sponsored CultureMap Dallas feature from December 2025 instead describes Shiner Texas Vodka as distilled more than ten times in a towering copper column still, using proprietary yeast.

From the hospitality room to Texas shelves

In July 2023 the vodka, gin, and shine were sold only at the distillery in Shiner, with store shelves and more markets to come, InsideHook reported. The distillery grounds now include Rickhouse, an on-site restaurant and bar, and a Shiner Texas Bourbon launch is planned for 2026, according to the sponsored CultureMap feature.
