Wyborowa Vodka: Poznan Rye Spirit, From Raw Spirit to the ODDKA Range

Hartwig Kantorowicz set up a new distillery in Poznan in 1823, and when the president of a Polish newspaper's judging panel proclaimed his vodka "Wyborowa!", meaning "exquisite", he named it after the exclamation, Difford's Guide says. Pernod Ricard, which calls itself the producer of Wyborowa Vodka, describes it as a synonym of Polish distilling tradition, a heritage it says it has been cultivating for nearly 600 years.

How Wyborowa rye vodka is made

Wyborowa Blue is produced from 100% rye farmed in western Poland that is mashed and distilled once in some 30 small agricultural distilleries to make raw spirit, Difford's Guide says. That raw spirit is then rectified in a three column continuous still at the Wyborowa distillery. Pernod Ricard's brand page lists the ingredients as water and ethyl alcohol of agricultural origin from rye, with nutrition tables for Wyborowa at 37.5% and at 40%.

"Wyborowa Exquisite" and its Single Estate name

"Wyborowa Exquisite" is distilled from a single rye variety, Dankowskie Złote, using only raw spirit made at a distillery in Turew, Poland, Difford's Guide says. That spirit is rectified at the main Poznan distillery and reduced to bottling strength with water from the distillery's own well. The line launched in mid 2004 as Wyborowa Single Estate, with "Exquisite" at the bottom of the bottle, the guide says.

Difford's Guide lists Polmos Poznan (Wyborowa S.A.) at Komandoria Street 5 in Poznan, operational and not generally accessible to visitors. Its product list includes an ODDKA by Wyborowa range with Original, Salty Caramel Popcorn, Wasabi, Fresh Cut Grass, Apple Pie, and Electricity. It also lists Wyborowa Almond and Melon vodkas, with the almond vodka made from rye farmed in western Poland.

During the Communist regime, Wyborowa was a flagship brand with relatively small quantities exported to the west, Difford's Guide says. Each approval appears in the TTB label records for Wyborowa on this page.
