Żubrówka Vodka: The Białowieża Grass Behind Its Bison Grass Expression

Polish nobility were adding a blade of bison grass to their drink in the 15th century, believing it an aphrodisiac that carried the bison's strength, Żubrówka's website says. Difford's Guide puts the practice a century earlier, saying it is said to date to the 14th century.

What bison grass is and where it grows

Bison grass is a folk term for two species (sweet-scented turówka and forest turówka) which grow in north-eastern Poland and particularly the Białowieża Forest, the brand's website explains. The plants stand 40 to 60 cm tall and smell strongly of coumarin, an aroma the site likens to fresh hay, honey, and bison hair.

The grass grows only wild and produces no seeds, and harvesting runs from mid-June until October, by the website's account. Difford's Guide instead says the grass is harvested by hand once a year in June, when its flavour is richest, and notes that the bison do not eat it.

How Żubrówka Bison Grass is flavoured

The aroma only becomes active during drying, when the cleaned stalks lie spread on wooden shelves in warm attics, Żubrówka's website says. The macerate is made in two stages (water maceration and alcohol maceration) in equipment called macerators, then seasoned for several days and filtered, the site continues. The result is an intense green liquid that tastes of freshly cut hay and flavours the spirit and water, by the same account. In the Bison Grass expression Difford's Guide describes, a blade of the grass is immersed in each bottle, giving a translucent greenish colour.

How far Żubrówka sells

Żubrówka is exported to more than 40 countries, its website says. The brand ranked third among the world's best-selling vodkas in 2023, the site adds, citing a report by The Spirits Business. Seven years earlier the same publication had ranked it fifth, with volume up 18.7% to 6.15m nine-litre cases, citing Brand Champions data.

Żubrówka's renewed push in the United States

Żubrówka is being relaunched in the US, where the Bison Grass and Biala expressions are getting a renewed push in 37 states, Global Drinks Intel reported in October 2026. Daniel Olech, co-CEO of the Miami-based importer The Brand Collective, called it a brand with nearly 600 years of history that still has room to grow in the US.
